Sourdough Discard Oreos
Oreos are one of my husband’s favorite cookies and when my toddler asked for some, I decided to try to make my own with some sourdough discard! The process was relatively quick and I was left with a big batch of cookies and leftovers to put into my freezer to see how well they froze. Here’s how I made them!
Ingredients
For the cookie:
113g sourdough discard
261g all purpose flour (you could theoretically try freshly milled. I was not feeling this ambitious today)
86g black cocoa powder (I have the one I used linked in my amazon storefront)
2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
400g sugar
228g butter at room temperature]
2 large eggs
For the filling:
226g butter
5 teaspoons vanilla
3 cups powdered sugar
1/4 teaspoon salt
Instructions
Preheat oven to 375 degrees farenheit
Combine your dry ingredients for the cookies and set aside
Use hand mixer or stand mixer to whip butter and eggs together, add sugar.
Combine dry ingredients with wet ingredients and mix until combined.
Onto two parchment paper lined baking sheets, spoon 1 tablespoon sized cookies onto the sheets and press down so the cookie is a little flat, make sure they are 2 inches apart
Bake them in your preheated oven for 12-15 minutes.
When they are cooked thoroughly and fragrant, take them out of the oven and allow to cool thoroughly before icing
While your cookies are cooling, prepare your icing by combining your icing ingredients in a bowl and beating thoroughly with a hand mixer or stand mixer.
Ice your cookies with about a teaspoon of icing for single stuffed cookies and 1/2 a tablespoon for “double stuffed” cookies. Place your second cookie on top and enjoy!
