Simple Sandwich Bread
Let me start by saying this: I love sourdough bread. I love the process of making it, I love the health benefits, and I love that there really isn’t a “right” or “wrong” way to do it. That being said, I know that sourdough can be intimidating, and sometimes, I need a loaf of bread in 2 hours, not 2 days. When that is the case, I love to make this simple yeast sandwich bread for my family. Here’s the recipe:
INGREDIENTS:
(For 2 loaves)
2 cups warm water (around 95 degrees Fahrenheit)
14 grams active dry yeast
1/2 cup milk
4 tablespoons sugar (you could opt for honey, but do 2 tablespoons if doing so)
112 grams coconut oil
3 teaspoons salt
860 grams flour - this recipe works with all-purpose, or my most recent attempt was 30% freshly milled spelt and the rest all purpose flour from Azure Standard
METHOD:
Combine your active dry yeast and water into your mixing bowl and allow your yeast to activate. You are looking for the yeast to start foaming at the top
Once your yeast is active, combine the rest of your ingredients to your bowl. Use a stand mixer with the dough hook and place on the lowest setting to mix, or mix by hand. If using a stand mixer, you are looking for the dough to peel away from the sides of the bowl or if you are mixing by hand, you are looking for the dough to start taking a shape
Add flour to your work surface and knead your dough for about 10 minutes
Once you have kneaded your dough, place it back into your bowl, cover and allow your dough to double in size for about an hour
Once your dough has doubled in size, press it down to release the air, place it on your floured work surface and shape your loaves by dividing your dough into 2, stretching each piece until it resembles a rectangle, folding the sides in, and rolling up your dough.
Place your loaves into greased loaf pans and allow to sit for an hour for their second rise. While they are in their second rise, preheat your oven to 350 degrees farenheit
Bake your loaves for 32-35 minutes until they are golden brown and sound hollow in the middle when you knock on them like a door
Let the loaves rest for 5 minutes before removing them from the loaf pans to cool further. Some people say you have to let them cool all the way before eating a slice, I’m team do what you want.
