Sourdough Discard “Lemonade” Muffins

These muffins were a little experiment in my kitchen that I think went really well. I can’t wait to continue to use the sourdough discard base recipe to build off of them and make so many other types of muffins! Here’s how to make them!

Ingredients:

  • 1 cup of sourdough discard

  • 1 1/2 cups all purpose flour

  • 1/2 cup sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/4 cup milk

  • 1/2 cup butter, melted

  • 2 eggs (duck eggs added a really nice touch to this)

  • Juice of 1.5 lemons (I think the juice of 2 lemons would have been better

  • Zest of 1 lemon

Optional: A really nice glaze could be made by mixing about 1/3-1/2 cup of powdered sugar (tip: save yourself $ and just blend up your regular sugar instead of buying powdered sugar)

Method:

  1. Melt your butter and set aside to cool, while your butter is melting, preheat your oven to 350 degrees Fahrenheit.

  2. Mix the rest of your ingredients together in a bowl and then add your butter last, once it has cooled down slightly.

  3. Add your batter to a pre greased muffin tin about 3/4 of the way full.

  4. Bake at 350 degrees Fahrenheit for 22-25 minutes!
