PB&J from scratch

These have become a favorite kid map prep for me. It seems daunting but once you get the hang of it, it’s actually pretty quick to prep. Here’s how I made it:

Peanut Butter:

Ingredients:

  • 2 lbs peanuts, roasted and unsalted

  • a pinch of salt

Method: Place everything in your food processor and blend until smooth. This took about 4-5 cycles in my ninja food processor

Strawberry Chia Jam:

Ingredients:

  • 2-4 cups strawberries (can be fresh or frozen)

  • 2-4 tbsp chia seeds

  • 2 tbsp lemon juice

Method: Cook your strawberries on the stove, smashing with the back of a spoon or potato masher as needed, until it forms a thick jam, this took about 10-15 minutes for me. Once all the strawberries have broken down, add in your lemon juice and then chia seeds. Continue to cook and stir for about 5 minutes and then remove from the heat. Allow to cool for a few minutes before transferring to a glass jar. Store in the refrigerator for up to 2 weeks.

Sourdough Discard Sandwich bread:

Ingredients:

  • 390 g milk, about 90F

  • 30 g sugar

  • 100 g sourdough discard

  • 3 g instant yeast

  • 56g avocado oil

  • 20 g salt

  • 825 g flour

Method: Combine all ingredients into your mixing bowl and mix with a stand mixer using the dough hook or a hand mixer. Knead on a floured surface for about 5 minutes and form into a ball. Allow to rise for 1-2 hours or until doubled in size. Release the air from your dough, cut the dough into 2 pieces and shape each loaf. Transfer to a greased loaf pan and allow to rise again until doubled in size. Bake in a preheated 375F oven for 45 minutes
