Oatmeal Crème Pies with Marshmallow Buttercream Filling

One of my favorite cookies while growing up were oatmeal crème pies, but the ingredients are less than ideal in the store bought and I enjoy baking, so I decided to make some. Here’s how I made them!

Ingredients:

For the cookie:

  • 170g butter, softened slightly

    150g white sugar

    250g brown sugar

    2 large eggs (I used duck eggs)

    1 large egg yolk

    1/2 tsp salt

    1 tsp baking powder

    1/2 tsp baking soda

    Splash vanilla extract

    3/4 tsp cinnamon

    222g all purpose flour or einkorn flour

    240g old fashioned oats, about 3 cups

For the filling:

  • 2 cups marshmallow creme (can be homemade using my recipe or store-bought)

    8 tbsp butter

    3-4 cups powdered sugar

Method:

  1. If making homemade marshmallow creme, make this and set aside in the refrigerator

  2. Preheat your oven to 350F

  3. In a large mixing bowl, beat your butter and both types of sugar using a stand mixer with the paddle attachment or a hand mixer. Add in your eggs and egg yolk and continue to mix.

  4. Add in your salt, baking powder, baking soda, vanilla, and cinnamon and continue to mix.

  5. Add in your flour and mix, then lastly, add in your oats, 1 cup at a time and continue to mix.

  6. Using avocado oil spray, grease your baking sheet; or lay a piece of parchment paper down onto your baking sheet.

  7. Scoop cookies using 1-1.5 tbsp cookie dough (or I used a melon ball scooper), you want them to be about 2 inches apart on your baking sheet.

  8. Bake in your preheated oven for 12-15 minutes, or until golden brown and slightly crisp around the edges

  9. While your cookies are cooling, make your filling by combining your marshmallow creme, butter, and powdered sugar and whipping until a fluffy icing is made.

  10. Once cookies are completely cooled down, create your sandwiches by adding filling to the flat side of one cookie, and creating a sandwich with another and enjoy.
