Homemade Marshmallow Fluff (corn syrup free!)

Making this marshmallow fluff seems daunting, but I was surprised at how easy it was! Here’s how I made it!

Ingredients:

  • 1/3 cup water

  • 3/4 cup sugar

  • 3/4 cup honey

  • 3 egg whites (room temp)

  • 1/2 tsp cream of tartar

  • Splash vanilla extract

Method:

  1. Add egg whites and cream of tartar in a stand mixer with the whisk attachment.

  2. Add water, sugar, and honey to a saucepan. Use low heat to combine these ingredients until the sugar is dissolved, then raise the heat *slightly* to simmer the mixture

  3. Insert a candy thermometer into the pot and continue to simmer until your mixture reaches 240F. While your mixture is simmering, start to whip your egg whites. You will be mixing them until “soft peaks” form, about 4-5 minutes.

  4. Turn your mixer on medium/low and pour your syrup mix in. (If it has firmed up, just pop it back onto the heat to thin it out again)

  5. Continue to whip your ingredients on medium for 8-9 minutes, or until your mixture is thick, glossy, and has cooled down. Add in your splash of vanilla in the last 2 minutes.

  6. When done mixing, transfer to an airtight container and store in the refrigerator for up to 2 weeks.
