Instant Pot French Onion Beef Stew

French onion soup is one of my favorite foods, but I feel like it’s not a “well rounded” meal, so I came up with the idea to add some protein to it by adding beef. I made it with short ribs this time, but next time will 100% be making it with a chuck roast. Here’s how I made it!

Ingredients:

  • 3 lbs beef, could be chuck roast or short ribs is what I did

  • 4 cups beef broth

  • 3 onions, thinly sliced

  • 3 tbsp butter

  • 2-3 tbsp apple cider vinegar (yes its necessary. It helps the beef be tender and not tough in the instant pot)

  • Season to taste with: Thyme, rosemary, garlic, salt, pepper, and bay leaves

For serving:

  • Slice of sourdough bread/artesian bread (you want it crisp/crunchy with a thick crust for the French onion soup effect)

  • Shredded gruyere cheese

Method:

  1. With your instant pot on sauté mode, sear your roast on all sides. Set aside on a plate.

  2. Melt your butter in a skillet or in your instant pot. Add your onions to your skillet/instant pot and caramelize slowly over medium low to medium heat. This will take 30ish minutes but the result will be worth it. To caramelize the onions, be sure to stir frequently so that the onions do not burn.

  3. Add your onion, beef broth, beef, apple cider vinegar, and generous amounts of seasoning to your instant pot and pressure cook on high for 45 minutes for short ribs, or 60 minutes for chuck roast. Allow your instant pot to *completely* release pressure naturally, or at least for 30 minutes. This is crucial to making sure your beef is fall apart and tender.

  4. Remove your roast or short ribs and shred, Add your meat back in and stir. Serve with a toasted piece of sourdough with melted gruyere cheese.

Note: If you are not an instant pot person, do not fear because I will be testing this recipe by doing it in the slow cooker and in the oven by braising
