Homemade Protein Peeps

Peeps were one of my favorite Easter treats as a child, and using natural sweeteners and a little bit of added protein really helped elevate these. Here’s how I made them:

Ingredients:

  • 3 tbsp beef gelatin

  • 3 cups water

  • 1/2 cup maple syrup

  • 3 scoops collagen powder of your choice (I have my favorite in my storefront)

  • 1 scoop regular protein powder (optional)

  • 1/2 cup dye free sugar sprinkles

Method:

  1. Combine your gelatin in your water and allow to “bloom” for 7 minutes

  2. Put your gelatin water in your stand mixer bowl or a large bowl and utilize your hand mixer

  3. Add in your maple syrup and protein powder(s)

  4. Some people have found it helpful to slightly heat this mixture up so everything is dissolved well.

  5. Turn on your stand mixer and allow your marshmallow mixture to mix until it turns into a thick, white, foamy mixture. This will take like 20-25 minutes.

  6. Grease a casserole dish with avocado oil and pour your marshmallow mixture into the casserole dish. Place this into your refrigerator to set.

  7. Using a bunny shaped cookie cutter, cut your peeps out. These can be stored in an air tight container in the refrigerator.

  8. *When ready to serve* add your sprinkles onto a small plate and roll your marshmallow in them. If you want to get fancy, pipe a little bit of chocolate onto the peep to create little eyes and a nose.
