Homemade Cinnamon Toast Crunch (Take 1)
Homemade cereal is something I have always struggled with. However, I am determined to make it great from scratch this year. This was my first attempt and I think I’ll do a couple things differently next week but want to share the recipe for those who would like to try as well.
Ingredients:
For the dough:
8 tbsp butter, cold and cubed
2.5 cups all purpose flour, I used einkorn and regular all purpose mixed
1/2 tsp salt
1/2 tsp cinnamon
4 tbsp maple syrup
2-4 tbsp ice cold water
Cinnamon Sugar Coating:
2 tbsp butter
4 tbsp sugar
2 tbsp cinnamon
Method:
Add your cold butter, flour, salt, and cinnamon to a food processor and pulse until it combines into a grainy, sand like texture.
Add in your maple syrup and water, tablespoon by tablespoon, until your dough starts to form.
Split your dough into 4 pieces to make it easier to work with.
Piece by piece, roll out your dough as thin as possible between two pieces of parchment paper. Having your dough as thin as possible helps it get as crisp as possible, because the dough will puff up while in the oven.
Preheat your oven to 350F
Using a knife or a pizza cutter, cut your cereal into small square shapes, about 1/2” inches size and place on a baking sheet lined with parchment paper.
Brush your squares very lightly with your butter and then sprinkle sugar and cinnamon over it.
Repeat this process with each of your other 3 pieces
Bake your cereal for 10 minutes. Allow to cool thoroughly before enjoying with a bowl of milk
