Pizza Goldfish

My regular goldfish recipe has gone absolutely insane (thank you guys so much for all the love on it). One of the requests (from everyone and my toddler) I had was to make pizza goldfish and I’m happy to report, they were a success! Here’s how I made them:

Ingredients:

  • 16 oz mozzarella cheese, shredded

  • 16 tbsp butter, cold and cubed

  • 2 cups of all purpose flour, I used einkorn

  • 2 tbsp tomato powder

  • 1 tsp salt

  • 1.5 tbsp Italian seasoning

  • 4 tbsp cold water

Method:

  1. Using a food processor, blend all your ingredients except the water until combined.

  2. Add in your water little by little until your dough starts to come together. You want it to be similar to a play-doh consistency.

  3. Once combined, form your dough into a disc and wrap in plastic wrap or parchment paper. Refrigerate for at least 20 minutes

  4. Preheat your oven to 350F

  5. Remove your dough from the refrigerator and roll it out relatively thin. Using a fish cracker mold, cut your fish crackers and place on a greased baking sheet. Be sure to save the scraps and roll them out as well so you utilize as much dough as possible.

  6. Bake in your preheated oven for 10-15 minutes, keeping an eye on them to make sure they don’t get too crispy. Allow to cool for 5-10 minutes before enjoying
