Dinner Rolls with Freshly Milled Flour
I am on a mission use more freshly milled grains when opting for bread products in 2025 so this dinner roll recipe was my first step in that. Made with whole grains and instant yeast, these came together super quickly
Ingredients:
430g Fresh milled flour (I used hard red wheat)
240g warm milk
56g coconut oil
35g honey
2 eggs room temperature
1 tsp salt
2.5 tsp instant yeast
Additional flour for kneading
1 egg for egg wash
Melted butter for after baking
Method:
Mill your flour and warm your milk
Pour your milk, coconut oil, honey, eggs, and salt into your mixer and mix until thoroughly combined.
Add in your flour and yeast until incorporated into a very sticky dough
Let your dough sit for 15 minutes to allow the flour to absorb all the liquid before moving on to kneading your dough.
Add a good handful of flour to your work surface and turn your dough out onto it. Using a bench scraper and then your hands, knead your dough in the flour until the stickiness is mostly gone. Spray the dough ball and your bowl with some olive oil and allow to rise covered for 1-2 hours.
Once your dough has doubled in size, divide into 12 equal parts and roll/shape each piece into a ball. Place each into a parchment lined baking dish (I ended up using a stone pie crust and it worked out great).
Allow the dough to rise again for 45 minutes to an hour until they are puffy and bigger than when you put them in the dish.
Brush with your egg wash
Bake in a preheated 350F oven for 30 minutes
Immediately add your melted butter onto your rolls and serve.
