Cinnamon Swirl Einkorn Banana Bread
Do you ever have a bunch of banana’s on your counter but you’re wanting something more than just your typical banana bread? This cinnamon swirl banana bread will blow all your expectations away. It utilizes einkorn flour and coconut sugar, although both can be substituted for granulated sugar and all purpose flour if that’s all you have
Recipe: (For two loaves)
Ingredients:
Batter:
4 cups einkorn flour (I love the jovial all purpose brand!)
2 teaspoon baking soda
4 eggs
2 cups coconut sugar
2 teaspoons vanilla
8 mashed bananas
2 cups melted butter
Cinnamon Swirl:
6 tablespoons melted butter
3/4 cup coconut sugar
4 tablespoons cinnamon
Method:
Preheat your oven to 350F. Melt your butter for your batter and set aside. Mix all your dry ingredients in a bowl and set aside.
Using a stand mixer or hand mixer, combine your mashed bananas, eggs, and coconut sugar. Mix until well combined
Add in your vanilla and continue to mix
Fold in your dry ingredients until your batter comes together
Grease two loaf pans
Combine the ingredients for your cinnamon swirl and set aside
Add about a cup of your batter and spread into an even layer, then add a tablespoon of your cinnamon swirl mixture and swirl it into the batter using a butter knife or a chopstick
Repeat the process of adding a cup of batter, spreading the mixture, then adding in your cinnamon swirl two more times. Once you’ve done the third layer of the swirl, add in the rest of the batter to both of your loaves to create a nice even top to your banana bread.
Bake on 350F for 65-75 minutes or until a toothpick comes out clean. If the top of your bread starts to become brown, place some aluminum foil on the top and continue to let it bake covered until the center is fully cooked
