Dill pickle chicken salad
This is easily my favorite chicken salad I’ve made so far. Here’s how I made it:
Ingredients:
2 chicken breasts, cooked thoroughly and shredded
3 ribs celery, chopped
1/4 red onion, finely chopped
2/3 cups mayo
3 tbsp dill pickle juice
3-4 pieces of fresh dill, finely chopped (can also use 2 tsp dried dill)
4-5 dill pickle spears, chopped
salt or herbamare
pepper
Method:
In your bowl, combine your mayo, pickle juice, fresh dill, salt, and pepper. Whisk until combined to create your dressing
Add in your celery, onion, pickles, and chicken breast. Mix with a spoon or a clean hand until combined.
Keeps in the refrigerator for 4 days but it won’t last that long!
