Dill pickle chicken salad

This is easily my favorite chicken salad I’ve made so far. Here’s how I made it:

Ingredients:

  • 2 chicken breasts, cooked thoroughly and shredded

  • 3 ribs celery, chopped

  • 1/4 red onion, finely chopped

  • 2/3 cups mayo

  • 3 tbsp dill pickle juice

  • 3-4 pieces of fresh dill, finely chopped (can also use 2 tsp dried dill)

  • 4-5 dill pickle spears, chopped

  • salt or herbamare

  • pepper

Method:

  1. In your bowl, combine your mayo, pickle juice, fresh dill, salt, and pepper. Whisk until combined to create your dressing

  2. Add in your celery, onion, pickles, and chicken breast. Mix with a spoon or a clean hand until combined.

Keeps in the refrigerator for 4 days but it won’t last that long!
