Chipotle Bean Salad

I’m currently trying out all sorts of new refreshing lunches for the summer months and this bean salad was such a hit! Here’s how I made it:

Ingredients:

  • 1/2 a red onion, diced in very small pieces

  • 1 red bell pepper, diced in very small pieces

  • 1 orange, diced in very small pieces

  • 1 can of black beans, rinsed and drained

  • 1 can of chickpeas, rinsed and drained

  • juice of 3-4 limes (mine weren’t very juicy, if yours are try 1-2)

  • 1-2 tbsp avocado oil (this honestly probably could have been left out but I felt like it was necessary at the time of making it)

  • 1/2 cup cilantro, chopped (leave it out if you don’t like it)

  • Season to taste with: salt, pepper, paprika, cumin, and oregano

Method:

  1. Combine all your ingredients in a bowl and mix thoroughly. Store in the refrigerator in a sealed container for 5 days max.
