Cosmic Brownies

These brownies brought me right back to when I was a little girl and would have them in my lunch. They are super tasty but have no junk in them. Here’s how I made them!

Ingredients:

For the brownies:

  • 227g butter, melted and cooled (typically people use unsalted for baking, but I’d be lying if I didn’t say I used salted for everything)

  • 350g cane sugar

  • 100g brown sugar

  • 3 duck eggs (chicken eggs work fine if that’s all you can find)

  • 1 egg yolk

  • 1 tsp vanilla

  • 90g cocoa/cacao powder

  • 125g flour

  • 1/2 tsp salt

For the icing:

  • 8oz chocolate, chopped/broken into small pieces

  • 1/2 cup heavy whipping cream

For the topping:

  • Dye free candy topping or unreal chocolate candies. I’ll have both of these options linked in my amazon storefront. You can also use m&ms or something similar, but I will always suggest opting for the dye free version when possible

Method:

  1. Preheat your oven to 350F

  2. In your stand mixer with the paddle attachment or a hand mixer, beat your butter, eggs, egg yolk, and both types of sugar until combined. Add in your vanilla and then your dry ingredients, little by little until combined

  3. Transfer to your brownie pan and spread out evenly until the surface is flat. Bake in your preheated oven for 27-33 minutes or until a toothpick comes out of the center clean.

  4. Allow your brownies to cool down all the way

  5. To make your ganache, heat up your cream until it starts to steam. Pour over your chocolate (should be in a heat proof bowl) and allow to sit for a couple of minutes.

  6. Fold your cream and melted chocolate together until it comes together to make a thick chocolate sauce (this is your ganache).

  7. Spread this over your cooled brownies and place them in the refrigerator for 10 minutes.

  8. If using unreal chocolate candies, I suggest chopping them to help create a more realistic effect with the topping. Do this while you let your ganache cool. Once you are done chopping them, sprinkle them on top of your brownies.

  9. I suggest cutting these as you serve them. Keep them in the refrigerator for up to 7 days, but I promise they wont last that long!
