Celebration Fish Crackers

These vanilla cupcake inspired fish crackers brought me back to the old days. I believe they still make ones like this, but these are so yummy and don’t have unnecessary ingredients. Here’s how I made them:

Ingredients:

  • 8 tbsp butter, cold and cubed

  • 6 tbsp maple syrup

  • 2 c + 2-3 tbsp flour

  • 1 tsp vanilla extract

  • 1/2 tsp almond extract (optional)

  • About 1/3 cup sprinkles (see note)

  • 1/4 tsp salt

Note: I’ll always recommend the dye free version. I found that the ones I linked in my storefront did retain some color, however if you are looking for super BRIGHT colors, there’s simply no way around using the food dye sprinkles in my experience. That being said, the ones I used did retain some color and looked cute still!

Method:

  1. In your food processor, blend your butter, vanilla extract, and maple syrup. Add in your flour and continue to blend until your dough comes together

  2. Turn your dough out onto a heavily floured surface and add in your sprinkles. Knead your dough to help mix the sprinkles evenly into your dough. Shape your dough into a ball and then press it down into a disc shape.

  3. Wrap your dough in plastic wrap and place in the refrigerator for 30 minutes - 2 hours.

  4. Preheat your oven to 325F

  5. Roll your dough out super thin and cut your dough into your fish crackers shape using a cracker mold. Arrange these pieces with about 1/2” between them on a baking sheet.

  6. Bake them in your preheated oven for 13-15 minutes. I would say aim for 13 minutes and only go longer if you feel it needs it. Mine were a little *too crispy* at 15 minutes
