Super Easy White Chicken Chili

Super Bowl Sunday is coming up and I’ve been thinking about this white chicken chili ever since I made it last year! It’s the perfect meal to watch football with. Here’s how to make it!

Ingredients:

  • 1 onion, diced

  • 1 bell pepper, diced

  • 4 cups chicken broth (can be bone broth if you prefer for added protein)

  • 1.5 lbs chicken, can be breasts or tenderloins, or if you want to make this recipe super easy, you can get a rotisserie chicken

  • 1 bag of frozen corn (I always try to get organic corn)

  • 2 cans of green Chiles

  • 5-6 cloves of garlic, minced

  • 2 cans of white beans (great northern or cannellini beans)

  • Season to taste with: cumin, oregano, pepper, salt, paprika, garlic powder, and bay leaf

  • 1 can of coconut milk or 2 cups of heavy cream

Method:

Instant Pot

  1. Turn your instant pot on sauté mode and sauté your onion and bell pepper in a tablespoon of avocado oil, tallow, or butter until your onions are translucent. Add in your minced garlic and sauté for 2-3 more minutes until your garlic is fragrant.

  2. Add in your broth, chicken, beans, green chiles and seasonings. Give all of that a good stir. Pressure cook on high for 10 minutes or until your chicken reaches 165F internally.

  3. Remove your chicken and shred it, add it back into your pot.

  4. Add in your coconut milk or heavy cream and give it a stir.

Stovetop:

  1. On medium low heat, sauté your onion and bell pepper in a tablespoon of avocado oil, tallow, or butter until your onions are translucent. Add in your minced garlic and sauté for 2-3 more minutes until your garlic is fragrant.

  2. Add in your broth, chicken, beans, green chiles, and seasonings. Give all of that a good stir. Boil until your chicken breast is cooked, about 15 minutes, or until your chicken breast reaches 165F internally.

  3. Remove from your pot and shred the chicken before adding it back in. Stir in your coconut milk or heavy cream.

Note: If using rotisserie chicken, I would just add it in and boil for maybe 5 minutes, just until everything is cooked thoroughly and combined. If you wish to simmer this dish for awhile to let the flavors incorporate super well then you can.

This dish pairs perfectly with my sourdough discard cornbread as well!
