Sourdough Discard Banana Bread

Got a bunch of bananas and sourdough discard that you need to use up? This banana bread recipe helps you solve 2 problems at once. Here’s how I made it.

Ingredients

  • 380g overripe bananas

  • 225g coconut sugar

  • Splash vanilla extract

  • 2 duck eggs

  • 100g sourdough discard

  • 250g all-purpose flour or einkorn flour can be used

  • 1.5 tsp baking soda

  • 1/4 tsp fine sea salt

  • 60ml milk

  • 125ml avocado oil

  • More avocado oil for greasing your pan

Method:

  1. Preheat the oven to 355 F.

  2. Lightly coat a standard sized loaf pan with your additional avocado oil.

  3. Use your stand mixer or hand mixer with the paddle attachment to mash your bananas. Add in your sugar, vanilla, and eggs and continue to mix.

  4. Add the sourdough starter. Continue to mix.

  5. Add in your milk and oil and continue to mix.

  6. Combine your dry ingredients into a bowl and whisk together. Working in batches, add this to the wet ingredients mixture.

  7. Pour your batter into your prepared loaf pan.

  8. Bake for 65 minutes or until a tooth pick comes out clean when put into the center.

    Allow to cool before removing from the pan.
