Monday Pasta

This pasta is my go to Monday night dinner. It takes 1 pot, uses a lot of bone broth (high makes it super nutrient dense), and contains veggies/protein/and a grain. For me, it’s the perfect meal on a busy night.

Ingredients:

  • 1 lb ground meat (I’ve used chicken and lamb but you could also use chicken or turkey)

  • 4 cups bone broth

  • 2-3 cups veggies (I say veggies because this dish is super versatile, I change up the veggies depending on the season, for the purposes of typing out the recipe, here’s what I used the most recent time I made this)

    • 1 onion, diced

    • 1 bell pepper, diced

    • 1 zucchini, diced

  • 3-4 cloves of garlic, minced

  • 16 oz pasta of your choice

  • Either a splash of cream or some shredded cheese

  • Seasonings: salt/herbamare, pepper, garlic powder, onion powder, Italian seasoning or whatever else you think sounds good!

Method:

  1. In a large saucepan or pot, cook your ground meat, then add in your onion and cook for 4-5 minutes. Add in your garlic and other veggies and cook for 5 or so minutes.

  2. Add in your pasta, seasonings, and bone broth. You want just enough broth to just almost not cover the pasta. It is a “trust the process” dish. Cook the pasta according to the package time

  3. Finish off the dish with either a little cream or some cheese and then it’s ready to serve.
