Homemade Nutter Butters

Nutter Butters are my husbands favorite cookie! These are super easy and fun to make, here’s the full recipe:

Ingredients:

For the cookie:

  • 1 1/2 cups einkorn all purpose flour

  • 1t baking soda

  • 1t potato starch

  • 8 tbsp butter, room temperature

  • 1 cup brown sugar

  • 1 cup natural peanut butter

  • 1 duck egg

  • Dash vanilla extract

For the filling:

  • 1 cup peanut butter

  • 1 cup powdered sugar

  • 3-4 tbsp heavy whipping cream

Method:

  1. Preheat your oven to 350F

  2. Combine your einkorn flour, baking soda, and potato starch in a bowl and whisk until completely combined, set aside

  3. Using a stand mixer or hand mixer with a paddle attachment, mix your butter and brown sugar until combined. Add in your egg and continue to mix, then add in your peanut butter and vanilla extract and continue to mix.

  4. Add in your dry ingredients in 1/3’s and mix until your dough has come together.

  5. Line your baking sheet with parchment paper. Scoop 1tbsp of the dough for each cookie. You can shape them into peanut shapes by rolling each tbsp into a ball, then a log, flatten it and pinch the center to create a peanut shape. Use a fork to create the pattern on the peanut. If this is too much, just roll each tbsp into a ball and flatten/create the square pattern using a fork

  6. Bake your cookies in your preheated oven for 10-12 minutes

  7. While your cookies are baking, create your filling by whipping your filling ingredients together until the filling comes together. It should be spreadable, but not so thin that its runny

  8. Allow your cookies to cool completely before icing them

  9. Ice the cookies and create sandwiches with them

  10. I preferred to store mine in the refrigerator, these will keep for 5-7 days but they will not last that long.
