Chocolate Sourdough Sandwich Bread

This chocolate sourdough bread has taken the internet by storm after I posted the video. So many people requested a recipe, so I am here to share it with you!

There are two different ways you can make this sourdough chocolate bread, the first is a traditional boule and the second is a loaf of sandwich bread. I personally love making sandwich bread because I find it to be an easier process.

For the traditional sourdough, I follow the process of making a traditional sourdough boule, but i add 25g coco powder and 50g sugar in with the starter and water. I then add chocolate chips as an inclusion (I don’t measure this part). I haven’t shared my personal sourdough recipe because that will be its own video and blog post, but if you are familiar with sourdough you should be able to easily make a chocolate loaf!

For the sandwich bread, here is the recipe:

Ingredients:

  • 115g sourdough starter

  • 300g water

  • 550g flour (all-purpose or bread)

  • 57g fat

  • 7g salt

  • 50g sugar

  • Dash vanilla

  • 25g coco powder

Instructions:

  1. In a bowl, mix the active sourdough starter, lukewarm water, cocoa powder and sugar. Let sit for a few minutes until your sugar has dissolved

  2. Add the softened butter or coconut oil to the mixture

  3. In a large bowl, combine the flour and salt. Gradually add the wet ingredients until a dough forms

  4. Knead the dough on a floured surface until it’s smooth and elastic.

  5. Place your dough in a greased bowl, cover, and let it rise until doubled in size (between 4-12 hours depending on starter activity and the temperature in your kitchen)

  6. Once your dough has doubled in size, punch it down, laminate, and shape your loaf.

    1. Laminating your dough is a process by which you flatten out your dough into a rectangle. I will be posting a tutorial on this in the coming future.

    2. To shape your dough, take your laminated rectangle and add chocolate chips, fold one side in, add chocolate chips, then repeat on the other side and add more chocolate chips on top, roll your dough up and then you have your shaped loaf.

  7. Place your newly created loaf into a greased bread pan, I typically grease my loaf pans with avocado oil spray.

  8. Allow your dough to rise again, this time for another 4 hours or until it reaches the top of your loaf pan.

  9. Preheat the oven and bake your bread at 375 for 35-40 minutes

Once this process is done, you will have your chocolate sourdough sandwich loaf. This made a really yummy French toast, I also think it would be amazing with some cream cheese and strawberries.
