Einkorn Sourdough Cornbread

My husband gifted me a grain mill for my birthday, and while my bread making ventures haven’t been so successful in freshly milled flour, I would say this sourdough cornbread was a success, here’s how you make it!

Ingredients:

  • 1 cup sourdough discard

  • 1 cup einkorn flour

  • 1 cup cornmeal

  • 1 cup milk

  • 4 tsp baking powder

  • Pinch salt

  • 1/3 cup cane sugar

  • 1 egg ( I used a duck egg)

  • 1/4 cup avocado oil

Method:

  1. Combine all your ingredients in a bowl

  2. Transfer your mixture to either a muffin tin or to a cast iron skillet. Bake at 400 for 20-25 minutes for a big thing of cornbread or 13 minutes for cornbread muffins.

  3. When your timer is done, use a fork or toothpick to test the center of your cornbread. If it comes out clean, then it’s done

  4. Allow to cool slightly before removing and serving.
