Easy Pickled Onions

Pickled onions are easily one of my favorite foods and they are SUPER easy to make at home. Here’s how I make mine.

Ingredients:

  • 1 large red onion, thinly sliced

  • 1 cup of water

  • 1 ish cup of apple cider vinegar

  • 2 tbsp - 1/4 cup honey (I don’t really measure this, you could also use granulated sugar)

  • 1 tsp salt or herbamare

  • Fresh herbs and/or garlic cloves (I’ve made them before with garlic and dill which was amazing, this past time I made them with just 2 sprigs of rosemary which turned out great too!

Method:

  1. Thinly slice your red onion and place into a jar.

  2. Combine all your brine ingredients into a small saucepan and bring up to a boil until the honey or sugar has dissolved and combined thoroughly with the vinegar and water.

  3. Take off the heat and allow to cool for a bit, we don’t need it cooled off all the way, just enough so that the jar doesn’t break when we add our brine

  4. Pour the brine into your jar, seal the jar and place in the refrigerator. Your pickled onions should be ready within 1-2 hours
