Copycat Zuppa Tuscana
This soup is one of my family’s favorites! It’s hard for me to go through a week where they aren’t asking me to make it at least once. Here’s how I make it!
Ingredients:
1 onion, diced
3 cloves of garlic, chopped
4 medium/large potatoes, diced
5 cups chicken broth
1 lb sausage (I prefer using beef sausage), with the casing removed
2 cups heavy cream (or coconut milk if you prefer dairy free)
3-4 cups of kale, destemmed and chopped
Season to taste with: salt, pepper, garlic powder, rosemary, thyme, oregano, basil, bay leaves,
Method:
In a large Dutch oven/soup pot, brown up your sausage, once the sausage is almost done, add in your onion and cook until they are beginning to become translucent. Add in your garlic and continue to sauté until fragrant.
Add in your broth and potatoes and stir until combined. Season to taste.
Cover your pot and simmer until your potatoes are fork tender, about 10-15 minutes, cut the heat.
Add in your cream and chopped kale and stir until combined
Served with a little bit of Parmesan cheese on top if you have it
