Swedish Meatballs

Swedish meatballs are one of my favorite comfort meals. Surprisingly, I don’t like it with the lingonberry jam though, so this recipe will not include it. Nevertheless, here’s how I made mine!

Recipe:

Meatballs:

Ingredients:

  • 1 1/2 cup panko breadcrumbs or homemade breadcrumbs

  • 1/2 cup grated pecorino cheese

  • Pinch salt

  • Pinch pepper

  • 1 onion, chopped

  • 6 cloves of garlic, minced

  • 2 eggs

  • 1/3 cup sourdough discard, cold

  • 2 lbs ground beef

**I eyeballed everything except the beef and eggs, so if you feel it needs more binder/sourdough discard, add a little more until you have the desired texture**

Method:

  1. Saute your onions and garlic and add them to a bowl with the rest of your ingredients. Mix with your hands and form into meatballs. Transfer to your greased baking sheet or cast iron pan and bake at 350F for 30-35 mins or until your meatballs come up to temperature.

Sauce:

Ingredients:

  • 8 tbsp butter

  • 1/2 cup flour

  • 4 cups broth

  • 2 tsp Worcestershire sauce

  • 1 tsp dijon mustard

  • 1 cup full fat greek yogurt

  • 6-7 cloves of garlic, minced

  • Salt, pepper, and a little oregano (optional)

Method:

  1. Add your dijon mustard and worcestershire to your broth and mix

  2. Melt your butter, add your garlic and sauté for 3 mins. Stir in your flour and cook for 2 minutes, stirring vigorously

  3. Pour in your broth mixture little by little, while continuing to stir. Bring to a boil then reduce to a simmer

  4. Place greek yogurt in a bowl. Spoon in some of the gravy and stir to temper the greek yogurt. Add back into the sauce over low heat and stir until all mixed.

  5. Add the meatballs back into your sauce and allow to simmer for a few minutes to allow the flavors to incorporate. Serve over Mashed potatoes or egg noodles
